Pumpkin Shortbread Bars

Ingredients
1 3/4 c sugar, divided
1 1/2 c all-purpose 昀氀our
1/2 c cold butter
4 large eggs, lightly beaten
1 can (29 ounce) solid-pack
pumpkin

1 t salt
1 t cinnamon
1 t ginger
1/2 t cloves
2 cans evaporated milk (12
ounces each)
Optional - Whipped cream
Instructions
• In a bowl, combine 1/4 c sugar and 昀氀our; cut in butter until
mixture resembles coarse crumbs. Press into an ungreased
13x9 baking pan.
• In a bowl, combine eggs, pumpkin, salt, spices and rest of
sugar (1 1/2 c). Stir in milk. Pour over crust.
• Bake at 425 for 15 minutes, then at 350 for about 50-55
minutes longer or until 昀椀lling is set. Cool on a wire rack, cover
and refrigerate overnight. Cut into 15 squares and top with
whipped cream, if desired.
• Recipe can be cut in half and put in a 9x9 pan.
